Meet the everyday essentials

Cumin

Earthy and warm, cumin works well with beans, lentils and roasted vegetables. Whole seeds and ground cumin bring slightly different textures.

Paprika

Paprika can be sweet, smoky or hot. Check the label before choosing it for a dish, and stir gently over heat so it does not scorch.

Coriander seed

Coriander seed has a light citrus aroma. Try a small amount with carrots, rice or a simple vegetable soup.

A few useful notes

Wake up the aroma

A brief, gentle toast can bring out the aroma of whole spices. Keep the pan moving and stop before the seeds become dark.

Store away from heat

Keep tightly closed jars in a cool, dry cupboard. A shelf above the cooker may be convenient, but heat and steam shorten their useful life.

Build a small collection

Buy modest amounts of spices you use often. Smell them before cooking; a faded aroma is a good reason to replace a tired jar.

A little curiosity is a useful kitchen ingredient.
